Feta Salad

Feta Cheese Salad
This is a hearty salad that tastes great in the winter or summer! We eat it as a meal unto itself and serve it in bowls with Kalamata olives and sliced French bread on the side. This is also a quick and easy dish to prepare if you’re on your way to a potluck.

Salad Ingredients
2 cup portion
4 cup portion
Feta cheese – crumbled (sheep feta tastes best)
3/4 cup
1 1/2 cups
Tomato – diced in small ½” x ½” cubes
2/3 cup
1 1/3 cups
Red onion – finely diced
2 tsp
4 tsp
Green cabbage – very thinly sliced cross-sections
1 cup
2 cup
Red pepper – diced in ½” x ½” pieces
1/2 cup
1 cup
Cucumbers – peeled, quartered lengthwise, then sliced thinly in cross-sections
1/2 cup
1 cup
Dressing Ingredients
2 cup portion
4 cup portion
Basil – finely chopped fresh basil or dried basil
2 tsp
4 tsp
Lemon juice
1/8 cup
1/4 cup
Olive oil
1/4 cup
1/2 cup

Directions:
Prepare all the salad ingredients in a large mixing bowl.

Mix salad dressing ingredients in a blender and pour over the salad.

Stir thoroughly with salad utensils and serve. The longer this salad sits, the better it tastes, so make it early and chill it in the refrigerator for an hour before serving.
